If the name Edward Lee sounds familiar, it’s probably because you’ve seen him on “Mind of a Chef” or Bravo’s “Top Chef.” The Brooklyn native owns restaurants in Louisville, Kentucky (610 Magnolia, MilkWood) and Washington, D.C. (Succotash).  “I’m not changing Southern food. I’m just adding another layer of vocabulary on top of what’s already there and what’s already respected. We just kind of change it up a little bit,” said Lee.

I travelled to Louisville, Kentucky, to interview Chef Lee about his latest experiments in fermentation, his take on the Southern classics and the bourbon boom.
